Our cream cheese flavors are made in house, not shipped in from some corporate warehouse.  If you look closely, any day of the week, in the back room you can see the cream cheese and its pure ingredients mixing in the 3 quart mixer.  Our cream cheese batches never last more than 5 days so "direct set" process (whatever that is?) is not necessary!
